Padrón is a <i>concello</i> in the Galicia.<u><span style="background-color: white; color: black;"></span></u> Whenever I travel to Spain one of the first tapa on my "must eat" checklist is a plate of fried Padrón. Quickly "blistered" in olive oil and served with plenty of Maldon rock salt, they are the perfect aperitivo with a slice of bread and an ice cold beer.<br />

Most taste sweet and mild, though some are particularly hot and spicy, which gives its character to the dish and is perfectly captured in the popular <i>"Os pementos de Padrón, uns pican e outros non"</i> (Galicina<a href="http://en.wikipedia.org/wiki/Galician_language" title="Galician language"></a> for "Padrón peppers, some are hot and some are not"). The level of heat varies according to the capsaicin<a href="http://en.wikipedia.org/wiki/Capsaicin" title="Capsaicin"></a> of each pepper. Although it's not always the case, the peppers grown towards August/September tend to contain more capsaicin than the ones of June/July. There are all sorts of theories about the 1-in-10 rule when it comes to Padrón spiciness. The accepted theory is that the peppers get increasingly hot as the season progresses.<br />

I consider myself very lucky to be able to find them here in Morocco all year round. Recently I've tried to grill them on the barbecue and it was sublime.<br />

Our body responds to the transition from warm to cold weather, and its related status as the season of the primary harvest, assimilating the new colours, smells and habits.<br /><br />For me Autumn comes as the green light for good and comforting food, all that food lovers have waited for, the best excuse to eat with a clear conscience. Not that my conscience was ever an obstacle when it comes to food.<br /><br />It was one of those typical Saturday mornings in Geneva and after picking the ingredients in the Eaux Vives market we were off for an afternoon of serious cooking.<br /><br />Six pigeon caracasses were roasted to prepare a brown chicken stock as a base for many preparations. Once brown, simply brush them with tomate paste and roast for 3-4 additional minutes. A delicate broth made with fresh leeks, carrots, turnips and onions will slowly cook our veal tongue which will be ultimately sliced and served with a herb vinaigrette. A visit to the <span class="blsp-spelling-error" id="SPELLING_ERROR_13">Amicucci</span> stand is a must, we'll talk more about them another time, and we started with a thick and foamy espresso, kindly offered by the owner, probably noticing our need for <span class="blsp-spelling-error" id="SPELLING_ERROR_14">cafeine</span>, before we could start. "-200 grams of transparent slices of <span class="blsp-spelling-error" id="SPELLING_ERROR_15">Mortadella</span> <span class="blsp-spelling-error" id="SPELLING_ERROR_16">di</span> Bologna", the striking aroma that starts making you hungry. </div><div align="justify"></div><div align="justify">Still not sure about the menu, and checking out the ingredients available to put a lunch together, we were asked to try one of their specialities of <em><span class="blsp-spelling-error" id="SPELLING_ERROR_17">saucisson</span>,</em> a wild fennel and the other <em>piquant</em>. </div><div align="justify"></div><div align="justify">That was the enlivening of our main course, snowy days require rich and comforting food, so we decided to make a <em><span class="blsp-spelling-error" id="SPELLING_ERROR_18">ragoût</span>, </em>a stew with fresh sausages. By adding some minced meat and <em><span class="blsp-spelling-error" id="SPELLING_ERROR_19">lardon</span></em> we just needed to chose the pasta to be eaten with our <em><span class="blsp-spelling-error" id="SPELLING_ERROR_20">ragoût</span> <span class="blsp-spelling-error" id="SPELLING_ERROR_21">alla</span> <span class="blsp-spelling-error" id="SPELLING_ERROR_22">bolognese</span></em>. "-500 grams of fresh tagliatelle", a nice chunk of Parmesan, home made tomato sauce (with the instructions of the owner on how to prepare it) and that would be the dish of the day.<br /></div><div align="justify">The kind lady still offered us a generous slice of roasted <em><span class="blsp-spelling-error" id="SPELLING_ERROR_23">porchetta</span>, </em>which now with all the respect to the <span class="blsp-spelling-error" id="SPELLING_ERROR_24">bolognese</span>, has taken actual main course place. It was in September, when I decided last minute to pack my bags and spend 5 days in Barcelona. Barcelona is a city admired by it's architecture, art, culture and history, but I was there with another purpose, eat and drink! </div><div></div><div><div><div><div align="justify">I could not find a better excuse to finally try the famous El Raco de Can Fabes, and also the perfect partner, Fabrício Marques brand ambassador for premium brands for Diageo (living in Barcelona), who gladly accepted to join me in this journey. </div><div></div><br /><div align="justify">With a table reserved at 14:00, yes 14:00, we left Barcelona around 12:30 heading to our final destination Sant Celoni. After a short and pleasant road, we found in the middle of the narrow streets, "Carrer Sant Joan" and our restaurant. After so many abortive trips, I couldn't believe I was entering the doors of Can Fabes.</div><div></div><br /><div align="justify">Behind my gastronomic trips there is always a great deal of planning, extensive menu analysis and research of articles from the press on the chosen Chef. For Santi Santamaria, I took a special pleasure to read and learn more about this Chef, which can be seen not only as a cook, but also a very intelligent man with a vast knowledge and solid cultural background. Within this context and moved by one of his past articles to the "Magazine de la Vanguardia" that we ordered "los aperitivos". </div><div></div><br /><div align="justify">Some of you might think that in a three Michelin it's inevitable to start with Champagne or local Cava, or still a fashionale cocktail, but we wanted to follow the Chef's advise and try to get as close to him as possible. -"Two Negronis, please!".
